Simple Sweet Potato Souffle Recipe

You’ll love how easy it is to make this scrumptious sweet potato souffle. Just blend and bake! Your guests will rave over the perfect texture and subtle sweetness. And it’s a wonderful side dish that compliments just about any main course.

A food processor makes quick work of this souffle, but you can also use a potato masher or fork to mix up all the ingredients. The key is to mash the potatoes until they’re smooth. This results in a beautiful souffle texture that melts in your mouth.

How To Cook Sweet Potato Souffle

Start by preheating your oven to 350 degrees.

Wash the sweet potatoes and then microwave them. Poke a few holes in them using a fork and then roll each up in a paper towel. Microwave for about 5-6 minutes per potato. For 2 potatoes, cook for 10 minutes total.

Slice cooked sweet potatoes in half, then scoop out insides and place soft filling in food processor (or mixing bowl if using masher).

Slice up 4 tablespoons of butter and also add to food processor. Crack in 3 eggs.

Add in remaining ingredients: vanilla, flour, sugar, baking powder, and salt. Blend in food processor until smooth.

Prep a 2 qt. baking dish with nonstick spray or brush with melted butter. Pour in souffle ingredients and smooth out top with the back of a spoon.

Bake for 45 minutes and enjoy!

Cooking Tips

  • This dish calls for 1 lb of sweet potatoes,  which equals about 2 large or 3 medium potatoes
  • To cook the sweet potatoes, you can microwave them, boil them, or cook them in an instant pot
  • After cooking, sweet potatoes will be soft when squeezed. If not, cook for a few more minutes until done
  • You can reduce the amount of sugar if you prefer this dish less sweet

Why Is My Sweet Potato Souffle Runny?

This can be the result of overcooking the sweet potatoes. Microwave them until they are soft, or about 5-6 minutes per potato. Also, most souffles  have a bit of a runnier texture in the center. This is totally normal.
