Wash the sweet potatoes and then microwave them. Poke a few holes in them using a fork and then roll each up in a paper towel. Microwave for about 5-6 minutes per potato. For 2 potatoes, cook for 10 minutes total.
Slice cooked sweet potatoes in half, then scoop out insides and place soft filling in food processor (or mixing bowl if using masher).
Slice up 4 tablespoons of butter and also add to food processor. Crack in 3 eggs.
Add in remaining ingredients: vanilla, flour, sugar, baking powder, and salt.
Blend in food processor until smooth.
Prep a 2 qt. baking dish with nonstick spray or brush with melted butter.
Pour in souffle ingredients and smooth out top with the back of a spoon.
Bake for 45 minutes and enjoy!
