Air Fryer Roasted Delicata Squash

Perfectly brown on the outside and tender on the inside, this Air Fryer Roasted Delicata Squash is amazing! It’s an easy 20-minute recipe that is super healthy, low-carb, goes with any meal, and is absolutely delicious!

Air Fryer Roasted Delicata Squash

When fall comes around each year I love making all the different kinds of squash! From butternut to pumpkin, I enjoy cooking and eating them all. But delicata is one of my favorites. It has a lovely flavor and the skin is so thin that when cooked it’s edible, which means you don’t even need to peel the squash.

And over the years I’ve tried making delicata squash in different ways like my Instant Pot delicata squash and roasted delicata squash. Both are really good! But this year I wanted to try roasting delicata squash in my air fryer. So I seasoned it and then popped it in the air fryer for a few minutes to cook. When it came out it was perfectly cooked and super yummy! Another delicata squash recipe for the books and one you should try too!

Added bonus! Because delicata squash is really versatile you can add other seasonings if you like. In fact, you can add herbs to bump up the savory notes or you can use just cinnamon only to make it sweet. It’s totally up to you! This recipe is just a template on how to roast delicata squash in the air fryer.

How to Make Air Fryer Roasted Delicata Squash

Roasting delicata squash in the air fryer is simple!  You only need a few basic ingredients. But you can use any herbs and seasonings you like. I just like to keep it simple.

  • Delicata Squash
  • Olive Oil
  • Salt
  • Black Pepper

To begin, wash the squash. Then cut it in half lengthwise and scoop out the seeds with a spoon. You can discard the seeds. Now, place the squash halves cut side down on a cutting board and slice them into half-moon shaped slices.

Next, put the delicata squash slices in a large bowl. Then sprinkle them with salt and pepper to taste along with a drizzle of olive oil. Now, toss the squash together with the oil and seasonings to coat.

Now, put the delicata squash pieces into the air fryer basket and put the basket into the air fryer to cook at 400°F for 15 minutes.

Then halfway through cooking, remove the air fryer basket and shake it so that the slices move around and cook more evenly.  Then place the basket back into the air fryer to finish cooking.

Once the air fryer roasted delicata squash is done, transfer it to your favorite serving dish to enjoy!

How to Store and Reheat Air Fried Roasted Delicata Squash

Leftover delicata squash will keep in the fridge for up to one week when stored in an airtight container. You can also freeze it for up to 3 months when stored in a sealed freezer bag.

To reheat, just put the roasted squash in the microwave for about 3 minutes on medium power or in the oven at 350 degrees Fahrenheit for about 10 minutes. However, if reheating from frozen, I suggest putting them on a baking sheet in the oven at 350 degrees Fahrenheit until they crisp up. This will take varying times depending on the portion size you are reheating, but will be around 20 minutes.

Instructions

  • Cut the delicata squash in half lengthwise. Scoop out the seeds with a spoon and discard. Place the squash halves on a cutting board and then slice into half-moon shaped slices.
  • Put the delicata squash in a large bowl. Then sprinkle with salt and pepper to taste followed by a drizzle of olive oil. Now, toss it all together to coat the squash in the oil and seasonings.
  • Put the delicata squash pieces into the air fryer basket. Now, put the basket into the air fryer and cook the squash at 400°F for 15 minutes.
  • Then halfway through cooking, remove the air fryer basket and shake it so that the squash cooks evenly. Then put the basket back into the air fryer to let it finish cooking.
  • When done, remove the delicata squash from the air fryer and transfer to your serving dish of choice to enjoy.
