Instant Pot Peppers and Onions Fajitas

I love Mexican food and fajitas are no exception! I have a skillet Mexican fajitas recipe on this site that replicates grilled peppers and onions from Chipotle restaurant.  Since the Instant Pot needs liquid for it to come to pressure, I’m using tomato sauce as a liquid to cook peppers and onions in this version of fajitas adapted to the Instant Pot.  Sliced bell peppers and onions are cooked in tomato sauce and seasoned with chili powder and garlic powder – super flavorful!

Making these Instant Pot fajitas is super easy and quick! In fact, you will set your pressure cooking time on the Instant Pot to ZERO, yes 0 minutes :) The way this technique works is that vegetables cook during the time the Instant Pot is coming to pressure (which takes about 5 minutes).  Once it comes to pressure, there is no need to cook them more, otherwise they’ll turn mushy.  I used the same technique on many other quick-cooking vegetables – see my recipes for Instant Pot broccoli, Instant Pot cauliflower, Instant Pot green beans and Instant Pot asparagus!

Instant Pot truly makes everything easy. Just dump sliced bell peppers, sliced onions, tomato sauce, chili powder and garlic powder in the Instant Pot, press the button and in less than 5 minutes have perfectly cooked Mexican fajitas! And if you’d like to make an Italian version of peppers and onions instead of Mexican, skip the chili powder and add 1 tsp of Italian seasoning instead :)

These peppers and onions fajitas are very versatile.  You can serve them as a vegetable side dish, over rice (Instant Pot cilantro-lime rice is an awesome option), in tacos or taco salad, burritos, salads, or as part of meal prep (see my Mexican mason jar salad recipe that uses fajitas as one of the layers)!

Instructions

  • Pour the tomato sauce into Instant Pot. Add bell peppers and onions (put them on top of tomato sauce without mixing). Sprinkle with chili powder and garlic powder.
  • Close the Instant Pot lid and turn the valve to a Sealing position. Press the "Pressure Cook" or "Manual" button and set the time to ZERO (0) minutes. Peppers and onions will cook just enough during the time Instant Pot is coming to pressure.
  • When the timer beeps, quick release (QR) the steam. Mix everything in the pot and serve.
  • These peppers and onions fajitas can be served hot or cold.

Notes

For the Italian-style version, omit the chili powder and add 1 tsp of Italian seasoning instead.

    I was looking for a recipe for peppers and onions that didn’t involve an oven (current temps in the high 90’s and humid). I pressure cooked chicken quarters in another pot, while they were on natural release, I started these up. Timing was perfect, will be making these again. Super easy to tweak for slightly different flavor too. I added more peppers and onions, a few cloves of fresh garlic and some tomato paste to thicken it at the end. Served over rice with chicken, so yummy. Thank you!
