The awesome part of using cake mix to make muffins is that you can skip so many steps! The cake mix contains ingredients such as flour, sugar, and baking soda. When you add pumpkin puree to it, you have all the necessary components for fluffy, moist pumpkin muffins.

You can use spice or yellow cake mix for this recipe. If you go with plain, yellow cake mix, we recommend you add a bit of cinnamon, for that fall spice flavor. It tastes delicious with the pumpkin!

How To Make 2-Ingredient Pumpkin Muffins With Cake Mix

Preheat oven to 350 degrees. Line a muffin tin with baking cups for easy clean-up.

Add a box of cake mix to a mixing bowl. Top with a can of pumpkin puree. If you are using yellow cake mix, also add a teaspoon of cinnamon (or pumpkin spice).

Use a kitchen utensil to mix everything together. Add batter to muffin cups using a couple of tablespoons. The cups will be mostly full. Use a spoon to smooth out the surface of the batter.

Place muffin tin in oven and bake for 25 minutes. Then, pull the muffins out and check with a toothpick to see if they are done. Poke a muffin and see if the toothpick comes out clean. If not, pop the tin back in the oven for another few minutes and check again.

Once muffins are golden brown and perfectly baked, place muffin tin on countertop to cool down. Peel the paper liner off of a muffin and enjoy.
