Cooking Tips

  • Use lite (low-fat) coconut milk for this recipe. Full-fat coconut milk can cause some instant pots to show a “burn” notification
  • If you rinse your rice during prep, it will absorb some of the water, so you only need to use a 1/4 cup of water for cooking
  • Be sure to mix up the coconut rice when it’s done cooking, to blend the liquids into the rice
  • Sugar is optional here, but does add flavor

Does Coconut Rice Taste Like Coconut?

Yes, but it’s a very mild, subtle flavor from the coconut milk. It tastes more savory than super sweet.

How To Avoid Mushy Coconut Rice:

Use the appropriate amount of water and cook for the right amount of time. Ratio of water to rice should be 1/2: 1 1/2 cups. Cook according to package instructions. Mushy rice results from the grain of the rice splitting open and becoming too soft.
