Instant Pot Coconut Rice
Adding flavor to rice really puts it over the top! And this recipe is a really simple take on coconut-infused rice. You just need white rice, lite coconut milk, water, and some seasonings. The instant pot does all the work for you!
You can use any type of white rice for this recipe. Jasmine rice is shown, but you can also use basmati rice or plain white rice. That makes this recipe easy for any occasion.

How To Make Coconut Rice in the Instant Pot
Open up the instant pot and pour in white rice. Add sugar, salt, coconut milk, and water. Close the lid of the instant pot and flip the valve to sealed.
Cook at high pressure for 4 minutes, then let the steam naturally release for another 10 minutes. Finally, turn the valve to do a quick release.
Once steam is all released, open the lid of the instant pot. Give rice a stir. Then scoop rice out of instant pot into a serving bowl.
Cooking Tips
- Use lite (low-fat) coconut milk for this recipe. Full-fat coconut milk can cause some instant pots to show a “burn” notification
- If you rinse your rice during prep, it will absorb some of the water, so you only need to use a 1/4 cup of water for cooking
- Be sure to mix up the coconut rice when it’s done cooking, to blend the liquids into the rice
- Sugar is optional here, but does add flavor
Does Coconut Rice Taste Like Coconut?
Yes, but it’s a very mild, subtle flavor from the coconut milk. It tastes more savory than super sweet.
How To Avoid Mushy Coconut Rice:
Use the appropriate amount of water and cook for the right amount of time. Ratio of water to rice should be 1/2: 1 1/2 cups. Cook according to package instructions. Mushy rice results from the grain of the rice splitting open and becoming too soft.
How Long Does Coconut Rice Last in the Fridge?
Properly stored and sealed, coconut rice can last up to 5 days in the refrigerator.
