Fluffy Scrambled Eggs With Green Onions

As much as I love eggs for breakfast, sometimes eating plain scrambled eggs just won’t cut it for me.

Last time, I tried switching things up by adding in some spinach and feta to my scrambled eggs and let me tell you – I was so happy how it turned out. They were so filling and delicious!

I’ve even done a Mexican version of scrambled eggs with some bell peppers, onions, and salsa mixed in; and it was like a fiesta in my mouth!

This time around, I wanted to keep things a little simpler but still different all at the same time…

So I decided to go with green onions!

This fresh green veggie adds little pops of zest and brightness to the protein-rich eggs. I also sprinkled in some shredded cheese at that last minute and it’s a dynamite combination.

With the green onions, you can add as little or as much as you want. I love to eat these eggs when I’m trying to stick to a certain number of carbs a day.

How To Make Scrambled Eggs With Green Onions

Before you even heat the pan, make sure to first prep all of your ingredients so you can make the best scrambled eggs for breakfast possible!

Take your green onions, chop them up very finely with a good knife, and place them in a bowl.

Heat the olive oil in a large non-stick frying pan over some medium-high heat (click here for great frying pan I recommend). Add the chopped green onions and cook them down, stirring occasionally, for about 4 minutes.

Crack the number of eggs you need in a separate bowl and whisk them together with a hand held whisk or a fork until the eggs are fully scrambled. You can also just crack the egg straight into the pan when you need to have minimal cleanup (that’s what I need on the picture below).

Add the eggs and shredded cheese and stir until everything is combined.

Cook and stir everything together for 2 minutes or until the eggs are set.

Sprinkle with some salt and pepper to taste.
