To begin, pour 1 cup of water into the Instant Pot. Then put the Instant Pot trivet in the bottom of the pot to help elevate the chicken. However, this recipe will work with or without a trivet.

Next, sprinkle both sides of the chicken leg quarters with a generous amount of salt, black pepper, garlic powder, and paprika. Then massage the seasonings into the meat, ensuring to fully coat the chicken.

Place the seasoned leg quarters inside the Instant Pot and then secure the lid. Now, turn the valve to the sealing position, press the pressure cook button, and set the cooking time to 20 minutes on high pressure.

 Cooking Tips

  1. Use a meat thermometer to ensure that the chicken is fully cooked. The thickest part of the leg quarters should reach a minimum temperature of at least 165°F (74°C).
  2. For an extra layer of texture and flavor, you can put the cooked chicken under the broiler for about 5 minutes to crisp up the skin.
  3. Let the chicken rest for a few minutes before serving. This helps redistribute the juices within the meat, which helps to keep the meat tender and juicy.
  4. Feel free to double the recipe. The cooking time is the same.
  5. Don’t be afraid to experiment and use any spices you prefer. Whether it’s a smoky BBQ rub, a zesty lemon-pepper blend, or a spicy Cajun seasoning, this recipe is extremely versatile.
