Ingredients
- 3 pounds chicken wings
- 1 tsp paprika
- ½ tsp garlic powder
- 1 tsp salt or to taste
- 4 tbsp butter
- 2 tsp garlic minced
- ¼ cup hot sauce
- 1 tbsp soy sauce
- ½ cup peach preserves
- 2 quarts vegetable oil to 3 quarts or enough to fill your deep fryer according to the manufacturer's instructions.
Instructions
- Heat the deep fryer to 350°F. Season the chicken wings with the paprika, garlic powder, and 1 teaspoon salt.
- In a saucepan over medium heat, melt the butter. Stir in the minced garlic, then add the hot sauce, soy sauce, and peach preserves. Simmer for about 5 minutes, stirring occasionally, until the sauce thickens into a glossy glaze.
- Fill the deep fryer with 2 to 3 quarts vegetable oil (or enough to reach the fill line) and fry the wings in batches for 12 to 15 minutes, until golden brown, crispy, and cooked through.
- Transfer the cooked wings to a paper towel-lined plate and let the excess oil drain for a minute.
- Place the wings in a large bowl, pour the warm peach sauce over the top, and toss until every wing is evenly coated.
- Serve immediately while hot with your favorite dipping sauce, if desired.
Notes
- For the crispiest wings, avoid overcrowding the fryer and cook the wings in batches.
- Adjust the amount of hot sauce to make the glaze milder or spicier to suit your taste.
