Healthy Grilled Zucchini Slices

You’ll want to make this summer grilling staple again and again! With just a hint of balsamic vinegar and deep grilled flavor, these zucchini slices will be a hit every time. And it’s a big crowd-pleaser. Even folks who don’t usually enjoy zucchini like this seasoned, grilled version.

You can skip the balsamic vinegar, if you prefer, although it does add a nice zing of flavor. We also used olive oil, salt, pepper, and garlic powder to season the zucchini slices, although you can use any seasonings you love on vegetables. Just sprinkle on the  seasonings and grill up for a quick & tasty BBQ side.

How To Make Grilled Balsamic Zucchini Slices

Prep your zucchini first by washing it and cutting off the stems. There is no need to peel them as the peel is edible.

Preheat the grill to high heat. Close the lid so it heats up faster.

Slice each zucchini lengthwise into 4 pieces.

Pour olive oil and vinegar into a small bowl and stir to combine. Use a pastry brush to spread marinade on zucchini slices. Sprinkle each slice with salt, pepper, and garlic powder. Then flip the zucchini slices over and seasoning the other side with marinade and seasonings.

Open your grill and reduce heat to medium low or low (depending on how hot your grill runs). Use tongs to lay zucchini slices out on grill. Close the grill cover to cook zucchini faster.

Cook for 4 minutes. Flip carefully using a spatula and tongs as zucchini gets very tender. Close lid and cook for 3 more minutes. Total cooking time depends on how soft you want the zucchini.

Next, check tenderness of zucchini with tongs. If need be, close the grill and cook for another couple of minutes until soft enough.

Once zucchini is done cooking, use tongs to remove zucchini from grill. Allow it to cool for a few minutes before eating.

  • Sprinkle seasonings of your choice on zucchini

How To Grill Zucchini

Grilling zucchini is easy! Preheat your grill and slice the zucchini. Season zucchini slices and add them to the grill. Turn down heat to medium-low. Close grill and cook for 4 minutes then open up grill to flip zucchini over. Close grill once again and cook zucchini for about 3 minutes or until zucchini is soft to your liking. Use tongs to remove zucchini from grill.
