The first step is to cut up your potatoes. You can choose to peel them or leave the peel on, it is just a matter of personal preference.

I recommend cutting each potato into quarters and then cutting each quarter into 4 parts.

Put the pieces of potato into a mixing bowl and add a little olive oil, which is optional but helps the potatoes crisp up.

Then add some salt and pepper to taste, as well as any other desired seasonings. Toss to coat evenly.

Then take out the air fryer basket and pour the potatoes into it.

Set the air fryer temperature to 400F for 20 minutes.

While the potatoes are cooking, you can peel and chop the onion. Add the onion into the mixing bowl and add a drizzle of olive oil, salt and pepper to taste. Mix to combine.

When the potatoes have been cooking for 10 minutes, take out the air fryer basket and add in the onions.

Mix with a spatula to combine everything.

Return basket to the air fryer and let it continue cooking.

After 5 minutes have passed, take out the basket and shake to toss the potatoes so everything cooks evenly. Use your spatula to make sure they are not sticking.

Return basket to the air fryer to finish cooking.

When done cooking, remove the air fryer basket and transfer the potatoes and onions to a serving plate.

Just made this. It’s very good and yummy! I never roasted onion before. They turned out nice and sweet. I used unpeeled yellow potatoes. Going into the rotation for sure. I’m eliminating animal products from my diet and used this as my main dish. Thanks Melanie!!
