Turkey, Avocado And Corn Salad Recipe

This delicious salad with turkey, avocado and corn makes a great healthy lunch or dinner. It is filling enough to be a main dish and is so delicious!
This salad is really easy to make – perfect for busy people! You can make this salad in less than 5 minutes from start to finish. Just put some lettuce on a plate, add canned corn, chopped avocado and cut-up deli turkey, then toss with oil and vinegar. Lunch is ready!
Ingredients:
Cubed cooked turkey breast
Canned corn, drained
Avocado, cubed
Lettuce leaves
Oil
Vinegar
Directions:
Whisk oil and vinegar (3 parts oil, 2 parts vinegar) to make a dressing.
In a large bowl, combine all ingredients. Toss with dressing to coat.
Note: you can also use cubed ham instead of turkey

Sometimes I heat the turkey in the microwave first, and I always use canned turkey since I am unlikely to have turkey leftovers in the summer. My kids LOVE this and so do I!!!!
