Mexican Street Corn Salad Recipe

This authentic Mexican street corn salad is amazing! Perfect for any party, barbecue or potluck! Everyone devours this Mexican corn salad, there is never a crumb left in a bowl!

Ingredients

  • 2 lbs frozen corn thawed (or fresh corn kernels cut off the cob)
  • 1/4 cup mayo
  • 8 oz crumbled Cotija cheese or use crumbled Feta instead
  • 1 jalapeno pepper finely chopped
  • 1 bunch cilantro finely chopped
  • 3 garlic cloves minced
  • 1 lime squeezed
  • Salt and paprika to taste

Instructions

  • Put corn, jalapeno, cilantro and garlic in a bowl and mix until combined.
  • In a cup, mix the mayo and lime juice until combined.
  • Add the mayo dressing to the corn mixture and mix until combined.
  • Add the crumbled cheese to the corn mixture and mix until combined.
  • Add salt and paprika to taste.

    I prefer grilling corn on the cob and cutting it off for my Mexican street corn. Also, la creama is so much better and more authentic than mayo. I love sprinkling Taijin seasoning on – has the chili and dehydrated lime that makes for the perfect flavor.
