- Mayonnaise: Makes the chicken salad creamy. Feel free to use any brand of mayo and add as much or little as you like. You could also use Greek yogurt if you prefer.
- Sweet Pickle Relish: Adds just a touch of sweetness and tang. You can omit this ingredient if you like or use other kinds of relish.
To prepare the shredded chicken salad, begin by cutting your already cooked chicken into chunks. Then add the chicken to the bowl of your food processor along with the mayo and relish.
Next, pulse the food processor a few times, using short bursts, until the chicken becomes shredded. But be sure to keep an eye on it to avoid over-shredding. You want the chicken to still have texture. Then transfer the chicken salad from the food processor into a separate bowl.

- Cut the chicken into chunks and put it into the bowl of a food processor fitted with a steel blade. Then add the mayo and relish.
- Pulse the food processor a few times until the chicken is shredded.
- Transfer the chicken salad into a bowl.
- Spread some of the chicken mixture onto a slice of bread and then top it with another slice of bread to make a sandwich.
