How To Make This Ground Beef and Eggplant Dish

This recipe is a one pan meal that you cook in a skillet. Set a pan to high heat and add the ground beef. Break it up a bit with your spatula.

While the pan heats up, prep your eggplant. Wash and dry the eggplant, then slice off the stem.  Slice eggplant in half and then continue chopping the eggplant until it is cubed.

Head back to the ground beef and turn the heat down to medium high. Break up the beef a bit more, into bite-sized pieces. Cook the beef, stirring every minute, until it is cooked through. This should take about 5 minutes.

Use spatula to move ground beef out of skillet to plate for the moment. Leave the excess grease in pan for cooking the eggplant.

Add eggplant to skillet. Add a splash of olive oil if need be. Cook for 15 minutes, stirring every minute. The eggplant should be tender.

Add ground beef back into skillet with eggplant. Mix ingredients together, then it’s time for seasoning. Sprinkle on salt and garlic powder and pour in the jar of salsa.

Turn heat back to high for about 1-2 minutes, or until mixture is bubbling. Mix until dish is combined and heated through. Use a spatula to transfer the entire meal to a serving bowl.

Cooking Tips

  • You can peel the eggplant, but that step is totally up to your preferences
  • If eggplant starts to burn before it’s done cooking, turn the heat down to medium
  • For best results, add seasoning at the end of cooking time
