This fresh salad comes together in no time. It’s super tasty and has a delicious, unique combination of flavors. You can even prep in advance, since the vinegar in the dressing keeps the produce fresh.

Just cube up apples and an English cucumber. Then top with raspberry vinaigrette. You can switch up the dressing to your preferences or even mix up a simple one of your choosing! This recipe is so easy and turns out beautifully every time.

How To Make Cucumber Apple Salad

Start with an English cucumber (or two regular-sized cucumbers) and 2 apples. Peel if you’d like, or wash the outside of the apples and cucumbers, then cube them up.

Add to a serving bowl and top with raspberry vinaigrette. Pour on dressing to taste. This recipe suggests a quarter of a cup. It’s perfectly fine to measure with your eyes on this one.

And it’s that easy! Give the whole salad a toss to mix throughly and serve to guests.

Cooking Tips

  • This recipe features raspberry vinaigrette, but you can use any olive oil-based dressing you prefer. You can even make your balsamic vinaigrette by whisking together balsamic vinegar and olive oil. Yum!
  • Cube the produce by slicing in half first. Makes it easier to get similar-sized pieces.
  • Totally your choice to peel the produce, or not. Be sure to wash thoroughly if keeping the peel on.

How Do You Keep Cucumber Salad From Getting Watery?

Sprinkle a little bit of salt on the cucumber pieces before adding them to the rest of the salad. This removes the excess water so the salad is less likely to get watery. It also adds a subtle salty flavor that goes well with the sweetness of the apples and the raspberry vinaigrette.
