How To Make Spring Roll In A Bowl

To prep your rice noodles:

  • add rice noodles to a pot of boiling water, turn off the heat, and let the noodles soak for 5 minutes
  • drain the noodles
  • rinse noodles in cold water

Add 2 cups of cooked rice noodles to a big bowl.

Then toss a bag of (pre-washed) coleslaw mix on top.

Chop imitation crab sticks into pieces, then add to the bowl. (You could also use small, cooked shrimp if you prefer.)

Now it’s time to make the dressing. In a glass measuring cup, combine olive oil, soy sauce, rice vinegar, and pepper with a whisk.

Pour dressing over the salad and toss to coat salad completely.

At this point, try the salad and add any more seasonings to your taste.

Ingredients

  • 2 cups rice noodles cooked
  • 14 oz coleslaw mix
  • 8 oz imitation crab can use 2 packages if desired or use cooked, small shrimp
  • 1/4 cup olive oil
  • 1 Tbsp soy sauce can taste and add more if needed
  • 1 Tbsp rice vinegar
  • 1/4 tsp pepper
