How To Make Air Fryer Zucchini And Squash
You’ll love how easy it is to cook zucchini and squash in the air fryer!
First we need to prep the produce. Wash both the zucchini and squash and slice off the ends. Cut zucchini lengthwise twice- into 4 long pieces. Then chop it into small pieces and add to a mixing bowl. Repeat with squash.
Drizzle in olive oil and add seasonings. We used salt, pepper, garlic powder, and Italian seasoning.
Toss produce to coat in oil and seasonings. Add contents of bowl to air fryer basket and close up air fryer.
Set to cook at 400 degrees for 15 minutes. Halfway through cooking time, open the air fryer and shake the basket to shuffle around the zucchini and squash. This helps to brown everything more evenly. Replace basket in air fryer and continue cooking.
When time is up, open up air fryer and use a spatula to move tender zucchini and squash to a serving bowl or plate.
Cooking Tips
- You can peel the zucchini and squash if that’s your preference, but it’s an optional step as the peels are edible
- Use seasonings of your choice
- Can omit olive oil, although it does give the produce a crispier texture and more flavor
How Do You Keep Zucchini From Getting Soggy While Cooking?
Most important tip- do not overcook. Too much heat and moisture on the zucchini will cause it to become mushy. Use an air fryer (if available) and be sure to salt the zucchini before cooking. A sprinkle of salt helps to remove excess water during the cooking process. Watch your time while roasting the zucchini and it will come out tender, yet still crispy on the outside.
