- 3 cups seedless watermelon, cut into chunks
- 1 tomato, quartered
- 1 garlic clove, minced
- ½ onion, quartered
- 1 cucumber, quartered
- 1 lime, juiced
- ¼ bunch parsley, bottom stems removed
- ½ jalapeno pepper, finely chopped
- ½ tsp salt
- ⅛ tsp pepper
- Put all ingredients in a food processor or blender and pulse until desired consistency (do not overblend).
- Refrigerate gazpacho for 1 hour or until fully chilled.
