I love peaches, they are one of my favorite fruits. I love the smell of peaches, feeling their velvety skin, biting into them and tasting their juicy sweet flavor. Peach juice is dripping, immersing you completely into the peach eating experience. How many peaches can you eat? I can eat so many that I just lose count :)
When peaches are in season, they are the most amazing, especially the organic ones. Local summer peaches simply rock! Juiciest and sweetest, get as many peaches as you can while they are still in season! In addition to eating them fresh, make a peach cobbler and this delicious chilled peach soup!
The phrase “peach soup” sounds so fancy, people immediately associate it with something elegant :) The first time I’ve had peach soup was in a fancy restaurant on a European cruise. I just had to recreate the taste of it when I got back from vacation. There are many peach soup recipes online that use lots of sugar, making them way too sweet and taste more like dessert or a smoothie. I want my peach soup to be a soup, so it’s sweetened lightly with honey and spiced with chili powder. This version of peach soup as definitely an appetizer, not a dessert!
Even though this cold peach soup is creamy, it is actually healthy! Something that’s creamy and healthy at the same time is a rare find! I don’t use butter or heavy cream to make this soup creamy – instead I’m using low-fat Greek yogurt. Nobody wants heavy stuff in the summer. Light yogurt gives this cold summer soup a perfect texture!
This chilled peach soup is super easy to make, you can make it in 5 minutes from start to finish! Since this is a cold soup, no cooking is needed! Not having to use the hot stove or oven in the summer heat is always a bonus. The only equipment that you need for making this recipe is the blender or food processor. Simply combine peach slices, water, yogurt, lime juice, honey and chili powder and blend until smooth. That’s all there is to making a cold peach soup! Enjoy!
Chilled Peach Soup With Yogurt
Ingredients
- 4 peaches sliced
- 1 cups water
- 1 cup plain low-fat greek yogurt
- Juice of 1 lime
- 2 tbsp honey
- 1/2 tsp chili powder
Instructions
- Put all ingredients in a blender.
- Process until smooth.
- Chill in the refrigerator until completely cold.
