Most recipes for peach lemonade are time consuming and require boiling peaches with sugar in water. Who wants to do that at the height of summer? Some recipes smash the peaches, but keeping your peaches sliced adds to the eye-appeal as well.
You can use this Instant Pot Peach Lemonade as a base for “hard” peach lemonade, and it’s just to die for! Just add some rum, bourbon or vodka :)
Tip: Fresh peaches are the best! But, if you get a hankering for summer in the middle of the winter, you can use frozen ones . - 1 cup lemon juice (freshly squeezed from about 5 lemons)
- 1 lemon, sliced
- 4 peaches, sliced
- 1 cup sugar
- 9 cups water, divided
- Pour 1 cup of water in the Instant Pot. Add peach slices and sugar.
- Close the Instant Pot lid and turn the valve to Sealing position. Press the "Pressure Cook" or "Manual" button and set the time to 10 minutes on High pressure.
- When Instant Pot is done cooking, quick release (QR) the steam.
- Transfer the cooked peaches and their liquid from the Instant Pot to a pitcher. Add the lemon juice, lemon slices and the remaining 8 cups of water.
- Refrigerate the peach lemonade for 2 hours, or until cold (or pour over ice if you'd like to serve it immediately).
