Made with naturally sweet fresh carrots and seasoned with a bit of ground cinnamon and rich maple syrup, this scratch-made creamy Mashed Carrots recipe is super yummy! It’s a quick and easy healthy side dish that you can whip together with just 4 ingredients in less than 15 minutes!

Easy Mashed Carrots Recipe

Did you know that you can mash carrots into deliciousness just like homestyle Mashed Potatoes and then serve them as a side that is gluten-free and lower in carbs!?! And they are incredibly tasty and super easy to make! No fancy equipment like a food processor is needed. Just a potato masher or fork.

Not to mention, we could all probably use more fresh veggies in our diet. So adding these mashed carrots to a meal is a great way to include a healthy side dish that your whole family will love. In fact, if you mix these yummy carrots with some Instant Pot Mashed Sweet Potatoes the kids won’t even realize they are eating carrots!

Health Benefits of Carrots

Carrots are jam-packed with minerals like biotin and potassium as well as vitamins A, K1, and B6. And their high amount of vitamin A is very beneficial to the health of your eyes. They are also full of carotene antioxidants that are thought to reduce the risk of cancer. So while carrots may have more carbs than some veggies they are a better choice than a big plate of potatoes. 

How to Make Mashed Carrots

You only need a handful of simple ingredients to make this easy recipe! 

  • 1 lb Carrots
  • 1/4 cup Water
  • 2 Tbsp Butter
  • 1/4 tsp Ground Cinnamon
  • 1 Tbsp Maple Syrup

To begin, place the baby carrots in a medium size microwave-safe bowl. Then add the quarter cup of water and cover the bowl with a microwave-safe lid or plastic wrap. Now, put the carrots into the microwave and cook them for 9 minutes on high power or until they are super soft. Then when they are done drain the water from the bowl. You can also boil them on the stovetop if you don’t own a microwave.

Next, cut the butter into chunks and add it to the hot cooked carrots. Then use a potato masher or fork to smash the carrots. I leave mine a little chunky, but you can mash your carrots as much or as little as you like. If you want them to be completely smooth you’ll need to puree them in a food processor.

Finally, sprinkle the mashed carrots with the ground cinnamon and drizzle them with the maple syrup. Then mash everything together once more. Now, taste the carrots and season with salt if needed before serving.

Recipe Tips

  • The carrots must be cooked until they are nice and soft so that they can easily be mashed by hand.
  • If you use salted butter you will most likely not need to add more salt to this dish.
  • If you want smooth carrot puree with no chunks you will need to puree them in the food processor or use an immersion blender.
  • Feel free to omit or adjust the amount of butter and maple syrup if you like.

Storage

Leftover mashed carrots will keep for up to 5 days in the fridge or up to 5 months in the freezer in an airtight container. To reheat, just put the carrots in the microwave for a few minutes on medium power. You can also reheat them on the stovetop over medium heat. However if frozen, you should let them completely thaw out prior to reheating.

  • 1 lb carrots

Instructions

  • Put the carrots and water together in a microwave safe bowl. Then cover the bowl with a microwave safe plate or lid. You can also use plastic wrap if you prefer.
  • Cook the carrots in the microwave on high power for 9 minutes. Another way to cook them is by boiling them in water on the stovetop. When done they should be very tender and easy to mash. Then drain the water from the bowl.
  • Add the butter cut into pieces to the hot cooked carrots. Then mash the carrots together with the butter using a potato masher or fork.
  • Add the ground cinnamon and maple syrup. Then mash it into the carrots.
