  • Add water to the Instant Pot and insert the trivet. Put the meat mixture inside the peppers, the put the peppers in the Instant Pot on a trivet. Put the remaining 1/2 cup of shredded cheese on top of the peppers.
  • Close the Instant Pot and turn the valve to a Sealing position. Press the "Pressure Cook" or "Manual" button and set the time to 5 minutes.
  • When it's done cooking, quick release (QR) the steam. Carefully remove the stuffed peppers and serve.

    Came out great. I made two minor taste preference changes. I used 1/2 lb loose Italian sausage and added some Italian spice. It worked worked well with cauliflower rice. I have done this in the oven with precooked Quinoa and that works well too as a Rice substitute. I made this in an Instant Pot Duo Mini and 4 peppers fit snuggly and cooked perfectly. I let it sit for 5 minutes after 5 minutes of cooking before the quick release without an issue. Thanks for the recipe idea.
