Ingredients
- 1 cup pumpkin seeds
- 1/3 cup almond butter
- 1/4 cup powdered erythritol or other sweetener
Instructions
- Put 3/4 cup of pumpkin seeds, almond butter and powdered erythritol in a food processor and process until smooth and sticky (about 3 minutes).
- Roll the pumpkin seed mixture into 1-inch balls.
- Put the remaining 1/4 cup of pumpkin seeds on a plate.
