Preheat your oven and line two baking sheets with parchment paper. Next, put the spinach leaves (make sure they are pre-washed and fully dry) in a bowl. Add in half a tablespoon of extra virgin olive oul and toss the spinach until it is coated with oil. Add the baby spinach to a baking sheet in a single layer and pop each sheet in the oven.

Ingredients

  • 5 oz baby spinach pre-washed and fully dry
  • 1/2 tbsp extra-virgin olive oil
  • salt and pepper to taste

Instructions

  • Preheat the oven to 300F.  Line 2 baking sheets with parchment paper.
  • Put the spinach leaves in a bowl, add olive oil and toss until spinach is coated with oil.
  • Add baby spinach to baking sheets in a single layer.
  • Put the baking sheets in the oven and bake for 20 minutes, or until the spinach is crispy.
  • Sprinkle with salt and pepper to taste.

  1. Reread recipe a couple of times. When do you add the salt and pepper? Before or after cooking? Also, why two sheets?

    1. Salt and pepper are added after cooking, as the spinach leaves shrink (so end up needing a smaller amount of salt). Two baking sheets as one doesn’t have enough space for spinach leaves to fit in a single layer.
