Who doesn’t like spaghetti and meatballs or an Italian meatball sandwich on a crusty roll? But who has time for all the browning and cooking usually required? Now, with Instant Pot Porcupine Meatballs with rice, you can have delicious juicy meatballs swimming in savory sauce in only 15 minutes! Wow!
Kids clamoring for spaghetti again? Need a great dish for a potluck? Don’t want to spend a lot of time cooking and then cleaning up? Your Instant Pot and this recipe for Porcupine Meatballs delivers on all counts – and they as so good – and so easy!
No, these meatballs are NOT made with porcupine meat, although the kids will probably joke about! The instructions do not begin with, “first, catch a porcupine….” Porcupine Meatballs with rice get their name from the rice mixed in with the meat. As the meat cooks, it shrinks a little, and the rice sticks out like porcupine quills. Your kids will ask for these again and again, and clean their plates every time! Besides being a hit with kids, I find adults love them too, and I often bring them to parties and potlucks instead of Swedish Meatballs.
These Instant Pot Porcupine Meatballs with rice are true comfort food, warming everyone up on a cold night, and can be served in any number of ways – Italian meatball sandwiches, over any kind of pasta, or over gnocchi or even rice.
Another awesome feature of meatballs with rice is that they don’t include bread crumbs. Yes, porcupine meatballs are gluten-free! Need more gluten-free meatballs recipes? Check out gluten-free meatballs with oatmeal.

Recipe tips: You can use either ground beef or ground turkey if you are watching calories. Either version is yummy. You can use regular uncooked white rice, or minute rice. Do not use brown rice as it takes longer to cook and might not be fully cooked through. The uncooked rice acts like breadcrumbs in a traditional meatball recipe, absorbing juices, and helping to hold the meatballs together – and they sure look a lot cuter!
It‘s no wonder Porcupine Meatballs were so popular in the 60s and 70s and 80s. Now, thanks to your Instant Pot, you can make them so quickly and easily! You can have a filling and satisfying dinner on the table in just 20 minutes! I remember my Mom making them, and I loved them as a child.
