Boneless skinless chicken thighs are my favorite cut of meat.  They are moist, easy to chew and have delicious mild taste.  Given the choice between chicken breasts and thighs, I’ll pick thighs any day.

Unlike beef and pork, chicken thighs are not considered to be “red meat”, so they are still in the “healthy protein” category.  But they don’t taste like a typical healthy food, they are much more substantial.   So succulent and yummy!

Unlike chicken breasts that can easily dry out and get tough, chicken thighs are very forgiving.  Chicken breasts can go from raw to overcooked in minutes, but that time window is much more flexible for chicken thighs.  Even if you overcook the thighs, they will continue to stay juicy for a while.

I’d say chicken thighs are impossible to mess up.  Even a beginning cook can make them taste perfect.  You don’t really need to do anything – just put boneless skinless chicken thighs in the oven for 30 minutes at 425 degrees and take out tasty juicy meat!

Easy Oven Baked Chicken Thighs Recipe

This simple recipe for baked boneless skinless chicken thighs uses the most basic seasonings – salt and pepper.  Feel free to customize it by adding your favorite spices!  Garlic powder and onion powder taste amazing with chicken!  You can also use chili powder or paprika to make them spicy!

You can also freeze cooked cup-up chicken thigh meat to use for later.  It makes a great base for quick chicken noodle soup – just throw in chopped chicken and noodles and canned chicken stock, and the hot yummy chicken soup will be ready in 15 minutes!  Having a cup of chicken soup is so comforting!

Baked Boneless Skinless Chicken Thighs

These baked boneless skinless chicken thighs are so simple and delicious! Make a big batch for dinner and meal prep throughout the week!

Ingredients

  • 2 lbs boneless skinless chicken thighs
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • Other seasonings to taste

Instructions

  • Preheat the oven to 425F. Line a baking sheet with foil or parchment paper.
  • Rub the chicken thighs with salt, pepper and other seasonings if using.
  • Put seasoned boneless skinless chicken thighs on the baking sheet.
  • Put in the oven and bake for 30 minutes.
