After trying Trader Joe’s Mango Jicama Slaw, I knew I had to try to recreate it at home!  If you haven’t tried Mango Jicama Slaw, well, try this recipe when you are looking for a change from the same old coleslaw.  It’s quick to make, fruity and herby with a nice crunch and limey zing.

Mango Jicama Slaw – Trader Joe’s Copycat Recipe -with sweet juicy mangos, crunchy jicama, crisp green cabbage, and a sweet, tangy honey-lime dressing is a quick healthy summer salad, refreshing and light.  It is perfect with grilled fish or seafood, chicken, burgers, or pulled pork, and almost any kind of Mexican food, such as tacos or carnitas.  My family loves it, and I bet yours will, too.

And if you’re thinking this Mango Jicama Slaw is healthy as well as delicious, well, you’re exactly right!  It tastes so good, even sort of exotic with those mangoes in it, you’d want to eat a bowl of it all by itself, even if it wasn’t so darn good for you!   It’s crammed full of Vitamin C – a serving has almost ¾ of you RDA! Wow!  Your immune system will thank you!   And, it’s high in fiber, and you know most of us don’t get enough of that every day.  This Mango Jicama Slaw might be the tastiest way to get your daily fiber!  And, yes, it’s low in calories and carbs and is gluten-free and paleo!   The perfect addition to just about any healthy eating or diet plan!

Tip: Make sure to pick out a ripe but firm mango, for easier slicing/julienning – a perfectly ripe and slightly soft mango will not work as well here and might  get mushy as you’re cutting it up.  If you’ve never tackled cutting up a mango, check out my tutorial how to cut a mango that will make it really easy!    Next tip – there is a percentage of people who don’t like the  taste of cilantro, and if you, or friends or family fall into that category, don’t think you can’t make this – you can simply replace cilantro with parsley!

So,  take advantage of a mango season, or a sale in your market, and whip up a big batch of this Trader Joe’s Copycat Mango Jicama Slaw.  If there are any leftovers, it will keep for a few days in the fridge.  Get your tropical vibe going!

Mango Jicama Slaw Trader Joe's Copycat Recipe

This mango jicama slaw tastes just like the one you'd get a Trader Joe's! Make a huge tub of it and much away! So much cheaper than store-bought!

Ingredients

  • 2 mangoes peeled and cut into matchsticks
  • 1 jicama peeled and cut into matchsticks
  • 1/2 small head of cabbage shredded
  • 1/2 bunch cilantro chopped
  • 3 limes squeezed
  • 1/3 cup of honey or maple syrup

Instructions

  • Put mango, jicama, cabbage and cilantro in a large bowl.
  • In a cup, mix the lime juice and honey with a fork until combined.
  • Pour honey-lime dressing over the vegetables and toss until combined.

Notes

This mango jicama slaw will stay fresh in a refrigerator for up to 5 days.
