Instant Pot Lentils And Brown Rice

Instant Pot Lentils and Brown Rice is a perfect vegan one-pot dinner!  Just dump lentils and brown rice in the Instant Pot, press the button and come back to a delicious hot plate! So healthy and yummy!

Ingredients

  • 1 cup brown rice
  • 1 cup lentils
  • 1 1/2 cups water
  • 1 tbsp olive oil
  • 2 tbsp Taco seasoning
  • 1 can chopped tomatoes
  • 1/4 cup chopped green onions for garnish

Instructions

  • Put brown rice, lentils, water, oil, Taco seasoning and chopped tomatoes in the Instant Pot.  Close the lid and turn the vent to a Sealing position.  Press the "Pressure Cook" or "Manual" button and set the time to 23 minutes on High pressure.
  • When the Instant Pot is done cooking, let the pressure release naturally (NR) for 10 minutes, then quick release (QR) the remaining steam.
  • Open the lid and mix the contents of the Instant Pot so everything is combined.  Sprinkle with green onion and serve.

    Thank you so much for sharing this delicious easy recipe! I used red lentils like you did and omitted the olive oil. I also added 1 tsp of garlic salt and 1 tsp of smoked paprika. It was amazing and I’ll be adding this to my rotation!
