How To Make Bacon-Wrapped Pineapple Bites
Cut each bacon strip into three pieces.
Put a pineapple chunk in the middle on each bacon piece.
Wrap pineapple with bacon.
Secure bacon wrapped pineapple slices with a toothpick so they don’t fall apart.
Put bacon wrapped pineapple pieces on a baking sheet.
Bake in pre-heated 425F oven for 20 minutes, or until the bacon is brown and crispy.

Bacon Wrapped Pineapple Bites Make Ahead
You can assemble these bacon pineapple chunks in advance and keep them in refrigerator until you are ready to bake and serve them. Just pop them in the oven 30 minutes before the party and they’ll be freshly baked, piping hot and crispy!
If you don’t have time or oven space to bake them right before serving, you can bake the bacon pineapple bites in advance and refrigerate. Before serving, simply put them on a plate and reheat in a microwave.
Bacon Wrapped Pineapple Bites With Brown Sugar Variation
You can add a twist to this recipe by dipping the bacon-wrapped pineapple bites in brown sugar before baking them! Crispy bacon with caramelized brown sugar on it tastes amazing!
I personally try to cut sugar and find the pineapple itself to be naturally sweet (I even make strawberry popsicles without sugar), but if you want to accentuate the sweetness, try the brown sugar trick :) You can even make half the batch with brown sugar and the other half without and then compare!

- ½ fresh pineapple, cut into chunks
- 1 package bacon
- ⅓ cup brown sugar (optional)
- Preheat the oven to 425F. Line a baking sheet with parchment paper.
- Cut the bacon strips into thirds.
- Wrap each piece of bacon around a pineapple chunk.
- If using brown sugar, put brown sugar on a plate and dip each bacon-wrapped pineapple piece in it.
