Instant Pot Pineapple Jam Without Pectin

Ingredients

  • 1 pineapple
  • 1 cup sugar
  • 2 limes

Instructions

  • Cut the pineapple into large chunks and discard the peel and core (see my easy instructions how to cut a pineapple).
  • Put pineapple chunks in a food processor fitted with a steel blade. Process for several minutes until smooth.
  • Squeeze the juice out of the limes into an Instant Pot. Add the pineapple puree and sugar to the Instant Pot. Close the lid and turn the valve in a Sealing position. Press the "Pressure Cook" or "Manual" button and set the time for 10 minutes on High pressure.
  • When the Instant Pot is done cooking, quick release (QR) the steam.
  • Press the Saute button on the Instant Pot and set the time to 15 minutes. Let the pineapple jam cook, stirring periodically, until thickened (about 10 minutes).

  1. I made this once following exactly and it turned out good. Nice and almost “creamy” spreadable. I made it again but doubled it and it’s chunky. Almost like crushed pineapple in a can where’s there’s pieces of pineapple with the juice. I did everything the same except doubling it. Is there a fix? I hate to waste this

    1. Have you done the food processor step where the pieces are blended? If they are blended, there won’t be chunky pieces. At this point to turn it into spreadable, blend the jam in a blender and then boil it again till it thickens.

    2. When making jams, jellies, preserves, there is a fruit/acid/sugar balance and doubling the recipe does not work. If you want double the amount of the recipe, then you should make the recipe twice. This is especially important if you are going to can your results.

  2. Pineapple jam is nice. My favourite blueberry & lavender jam which happens to be less popular. Of course strawberry jam.
