Instant Pot Kale
Ingredients
- 1 lb kale
- 1/2 cup water
- 2 tbsp extra-virgin olive oil
- 2 cloves garlic minced
- 1/2 tsp red pepper flakes (optional)
- salt (to taste)
Instructions
- Wash kale, the coarsely chop it and discard the stems. (You can simply tear the leaves into pieces with your hands).
- Pour water in the Instant Pot and add kale. Close the lid and turn the valve to a Sealing position. Press the "Pressure Cook" or "Manual" button and set the time to 3 minutes on High pressure.
- When it's done cooking, quick release (QR) the steam.
- Drain kale and add it back to the Instant Pot. Press the "Saute" button on the Instant Pot. Add olive oil, minced garlic and red pepper flakes and mix with kale. Cook, stirring every 10 seconds, until garlic is fragrant (about 1 minute). Add salt to taste.
I made this with just a few changes because of missing ingredient, but the time to cook is spot on. I used a big bag of TJ pretrimmed and a silicone steamer basket over the water. Definitely a good tip to immediate pressure release. After removing the kale and water, I added some EVOO and garlic powder (fresh garlic would be better of course),set to Saute, stirred quickly so the garlic didn’t scorch, dumped in all the cooked kale and stirred to slightly dry it, then added juice of one lemon, stirred for a couple of minutes till the juice was absorbed. If you like ACV on collards I think you’ll like lemon here. The only problem was I immediately ate over half of it
I love your recipe, Melanie 😊
