Meal Plan Weekly Shopping List

Easy Spanish Paella

  • 2 cups short-grain rice
  • 4 cups chicken stock
  • ½ tsp saffron threads
  • 1 bay leaf
  • 3 cloves garlic, minced
  • ½ tsp red pepper flakes
  • 4 tbsp olive oil
  • 1 large onion, chopped
  • 1 red bell pepper, chopped
  • 1 lb chicken breast or thighs, cut-up
  • 1 lb cooked shrimp, peeled and deveined
  • ½ lb chorizo sausage, crumbled

Baked Apricot Chicken Drumsticks

  • ½ cup apricot jam
  • ¼ cup soy sauce
  • 2 jalapeno peppers
  • 4 gloves garlic
  • 12 chicken legs

Pineapple Pita Pizza

  • 8 pita breads
  • 1 tbsp olive oil
  • 1 can (8 oz) pizza sauce
  • 1 package (8 oz) shredded mozzarella cheese
  • 1 can (8 oz) chopped pineapple, drained
  • 1 small onion, sliced

Homemade Crab Cakes

  • 1 lb lump crab meat (preferably fresh, but you can use canned drained crab meat)
  • 1 egg
  • ¼ cup mayo
  • 1 tbsp freshly squeezed lemon juice
  • 5 green onion stalks
  • ½ cup Ritz or saltine crackers, crushed (approximately 15 Ritz crackers)
  • ¼ cup flour
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 tbsp oil

Mexican Beef Enchiladas

  • 12 corn tortillas
  • 1½ lbs ground beef
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 can (8 oz) tomato sauce
  • 1 bunch of cilantro (leaves chopped, stems discarded)
  • 1 package (8 oz) shredded cheddar cheese
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tbsp oil

Easy Plum Pie

  • 8 medium plums
  • 2 cups flour
  • ¾ cup sugar
  • 1½ sticks (12 tbsp) butter, cut in 12 pieces
  • 1 egg
