This red cabbage coleslaw uses the same recipe as the healthy coleslaw recipe without mayo made with green cabbage.  You can use any coleslaw recipe to make red cabbage coleslaw – just because the cabbage is red, it doesn’t mean it requires a different recipe to make coleslaw out of it 🙂

I like the red cabbage coleslaw even more than the green cabbage coleslaw.  Red cabbage is a little more flavorful than green cabbage, and it also make a better presentation – vibrant red and purple color just looks more appealing than a boring green.

To make this red cabbage coleslaw, I use shredded red cabbage, shredded carrots, salt, pepper and a dressing of olive oil and lime juice.  This red cabbage coleslaw is super healthy as it doesn’t use any mayo!

Shredded the cabbage and carrots for coleslaw is super easy by using a food processor.  Just fit the food processor with a shredder blade, cut the cabbage into large chunks and feed the cabbage and carrots into a food processor to instantly shred them without much work!

Red Cabbage Coleslaw Recipe

Ingredients

  • 1 small red cabbage
  • 4 carrots, peeled
  • 2 tbsp extra virgin olive oil
  • 2 tsp freshly squeezed lime juice
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • Salt and pepper to taste

Instructions How To Make Red Cabbage Cole Slaw

  1. Cut the red cabbage into large pieces and discard the core. Use the food processor to shred the red cabbage.
  2. Use the food processor to shred the carrots.
  3. Mix the olive oil and lime juice, then pour over the shredded cabbage and carrot. Sprinkle with salt and pepper. Mix until combined. Add more salt and pepper to taste if needed.

This recipe makes a pretty large amount of the red cabbage coleslaw. If you are not going to eat everything at once, don’t add the salt, pepper and dressing to whatever you are not going to eat. When you shred the red cabbage and carrot, set aside whatever you are not going to eat right away, and only add salt, pepper and dressing to whatever you are eating today. Shredded cabbage and carrot without the dressing will keep in a refrigerator for up to a week! It will be your own homemade red cabbage cole slaw mix that you can use as needed.
