- 1 store-bought rotisserie chicken
- 1 pint cherry tomatoes
- 1 large seedless cucumber
- 1 bell pepper
- 1 small red onion
- ½ bottle (8 oz) Italian dressing
Shrimp Fried Rice
- 2Â cups white rice
- 1 lb of frozen cooked tail-off shrimp
- 1 bag (8 oz) of frozen stir-fry vegetables
- 3 tbsp oil
- 3 tbsp soy sauce
- 1 egg
Baked Stuffed Sweet Potatoes
- 4 sweet potatoes
- 1 bunch of broccoli
- 1 cup of walnuts
- 1 cup of dried cranberries
- ¼ tsp cinnamon
- Salt and pepper to taste
- Butter to taste (optional)
- Maple syrup to taste (optional)
Sausage Pita Pocket Sandwiches
- 1 lb lean turkey sausage
- 2 bell peppers
- 2 onions
