Who would have thought that you could take two classic favorites, fries and squash, and develop a whole new recipe? After just one bite of these amazing roasted acorn squash fries and you will be sold.

All you’ll need for these roasted acorn squash wedges is ten minutes of prep time, three ingredients, and a few easy steps. Are you sold on baked acorn squash fries yes? I am! Start by preheating your oven and lining a baking sheet with parchment. Cut your acorn squash in half carefully and scoop out all of the seeds from inside.  (To have your fries in a wavy shape, cut the acorn squash in half like on the picture below).

Next, cut the acorn squash into one-inch wedges before tossing the wedges in olive oil and cinnamon. Put the acorn squash wedges on the baking sheet, making sure to spread them into a single layer. Bake in the oven for thirty minutes until the squash wedges are tender and you have a delicious, cinnamon-infused batch of fries!
