Chopped salad is the ultimate main dish salad!  If you normally don’t eat salad as your main entree, you should try this chopped salad recipe – it will even fill up a big hungry man :) It also makes a perfect meal for those on a low carb diet like Atkins or South Beach – chopped salad is a combination of proteins like meat, egg and cheese with the healthy greens – no carbs!

Making chopped salad is super easy – just chop up the ingredients and mix!  It’s the ultimate quick and easy recipe that you should add in your kitchen repertoire.

Quick And Easy Chopped Salad Recipe

Ingredients

  • Lettuce greens
  • Hardboiled eggs, peeled and chopped
  • Deli meat, chopped (you can use any lunch meat like turkey, roast beef, ham, salami or bologna)
  • Sliced cheese, cut into pieces
  • Feta cheese or blue cheese
  • Tomatoes, chopped
  • Avocado, peeled and chopped
  • Italian dressing (or make your own by mixing 1 tbsp olive oil with 1 tsp vinegar)

Instructions

  • Mix all ingredients :)

Chopped salad is a great way to use leftover foods in your fridge.  Think you have nothing to eat tonight?  Check your refrigerator – if you have any two or more ingredients of the following – eggs, lunch meat, cheese, lettuce – just chop them up into a chopped salad :)

With the chopped salad, you can really be creative – just chop many different ingredients and mix!  Note that there are no exact quantities in the recipe – that’s because it doesn’t really matter how much you use – add as much or as little of each ingredient as you like.  If you like eggs, use two instead of one.  If you don’t like tomatoes, just leave them out :)  You can also add extra vegetables – cucumbers, green peppers and peas are also great in chopped salad!
