Tuesday Dinner Idea – Stuffed Meatloaf
This stuffed meatloaf is a fun twist on the regular meatloaf – on the outside it looks like the normal meatloaf glazed with ketchup, but when you slice it, it will reveal the boiled eggs, melted cheese and green peas!

Wednesday Dinner Idea – Hawaiian Pizza
Classic toppings for Hawaiian pizza are ham, pineapple chunks, onion slices and cheese. This is a vegetarian version of Hawaiian pizza that omits the ham but has all other ingredients – pineapple, onions and cheese – on top of a pizza crust. This recipe can be made in 20 minutes by using a store-bought pizza crust.

Chicken Vegetable Lo Mein
- 12 oz Chinese Lo Mein or Chow Mein noodles (or spaghetti)
- 1 lb skinless boneless chicken breast
- 1 onion
- 1 lb asparagus
- 3 garlic cloves
- 3 tbsp soy sauce
- 3 tbsp vegetable oil
- 1 lime
Stuffed Meatloaf
- 1 lb lean ground beef
- 4 eggs
- ½ cup frozen green peas
- 4 cheese slices
- 1 small onion, minced
- 2 slices of bread
- 2 tbsp ketchup
Hawaiian Pizza
- 1 large prepared pizza crust
- 1 can (8 oz) pineapple chunks
- 1 small onion
- 1 cup tomato sauce
- 1 cup shredded cheese
Salmon Fishcakes
- 1 can (14 oz) salmon
- 1 potato
- 1 small onion
- 1 egg
- ½ cup dried breadcrumbs
- 1 tbsp of oil
Baked Pasta Shells Casserole
- 1 lb pasta shells (small or medium size – NOT the huge ones for stuffing)
- 1 lb ricotta cheese
- 1 lb ground meat
- 1 jar pasta sauce (1 lb)
- 1 onion
- 1 tbsp oil
- 4 cloves garlic
- 1 egg
- 1 cup shredded cheddar cheese
Mini Chocolate Chip Cookies
- 2 1/4 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup butter
- 1 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla
- 1 bag (11 oz) Ghirardelli mini chocolate chips
