Cucumber lemon salad is tastes so bright, so clean and so extremely refreshing. It is great as an accompaniment to all kinds of meat and fish dishes. You can make the cucumber lemon salad in 1 minute, and have your meal brightened by this crunchy lemony cucumber slices!
Simple Cucumber Lemon Salad Recipe
Ingredients
- 1 large cucumber (I prefer English seedless cucumbers)
- 1 slice of lemon
- Salt and pepper to taste
Instructions
- Peel the cucumber and slice into thin slices.
- Sprinkle the cucumber slices with salt and pepper.
- Put the cucumber slices in a bowl. Squeeze the lemon over the cucumber slices and toss so they are coated in lemon juice.

I had the Simple Cucumber Salad Recipe along with my breakfast this morning, and I loved these cucumbers. I am on the low carb Mediterranean (Mediterranean Atkins) diet. I only need to lose 35 lbs. And the Mediterranean lifestyle of eating (wholesome healthy foods) and the first phase of Atkins (cutting back on the carbs) and you have a wholesome healthy way to take the pounds off. I also love sliced tomatoes fresh from the garden, and I have a neighbor who keeps us in freshly picked tomatoes, and I prepared them the same way along with the cucumbers, and I loved this simple salad. I enjoyed this salad more than my egg and bacon. Thank you for sharing this recipe. It is a refreshing enjoyable dish.
hi: I just joined today, for I have just started a cleanse and a veggie and fruit diet basically. I am finding this very difficult for I do not particularly like veggies at the best of times and I also have to eliminate sugar. I am trying to find clean fresh recipes and then I could just eliminate the sugar if needed to. Oh, I forgot, I also can eat organic meat, which is not easy to find as far as I know. First time I found this site and every recipe sounds very interesting and something I could probably eat without too much fuss. I am looking forward to having discussions and learning new things about healthy eating.
