Chicken In A Clay Pot Recipe With Potatoes

This chicken recipe is very simple, but the presentation in clay pots gives it a “wow” factor. Open the clay pot and reveal the hot steaming chicken and potatoes with a crust of baked melted cheese! Chicken in a clay pot recipe is surely a very impressive and unique one dish meal!
Clay pots can be purchased in Asian supermarkets. In this recipe, the pots are individual size – one pot serves one person.
Chicken In A Clay Pot Recipe With Potatoes

Ingredients For 6 Clay Pots:
1 cut-up chicken (about 4.5 lbs)
3 bell peppers, cored and chopped
3 onions, sliced
3 carrots, chopped
12 potatoes, peeled and sliced
3 cups chicken broth
3 cups of shredded cheese
1 bunch fresh parsley
6 tbsp mayo
3 tsp salt
1 tsp pepper
12 bay leaves
Directions How To Make Chicken In A Clay Pot Recipe:
Preheat the oven to 350F.
Divide the chicken pieces between 6 clay pots, and put the chicken on the bottom of the pots.
Distribute the chopped peppers between the clay pots, and put on top of the chicken.
Next, distribute the onion slices between the clay pots, and put on top of the peppers.
Distribute the chopped carrots between the clay pots, and put on top of the onion slices.
Next, put potatoes on top of the carrots (it will be 2 potatoes for each clay pot).
Sprinkle the potatoes with salt and pepper (1/2 tsp of salt and 1/8 tsp of pepper for each pot). Mix the contents of the clay pot with your hands to distribute the salt.
Pour 1/2 cup of chicken broth into each clay pot. Spread 1 tbsp of mayo on top of the potatoes in each pot.
Sprinkle the potatoes with parsley. Put 2 bay leaves on the sides in each clay pot. Add 1/2 cup of shredded cheese on top of the parsley.
Close the clay pots and put them in the oven. Bake for 2 hours.
Eat your chicken and potatoes straight out of the clay pots :)
