This recipe makes a true golden cornbread that doesn’t pretend to be anything other than a bread with deep corn flavor.  Some people make a cake with a little bitty sprinkling of corn meal and a pound of sugar and call it a cornbread.  Not me!  This cornbread has the whole cup of yellow corn meal, so the corn flavor really comes through.  It is not a cake, it is not a muffin, it is not dessert – it is a BREAD that will elevate your meal to the whole new level!

Any beginner can make this cornbread easily, even if you never bake and don’t even own a mixer!  No mixer or special tools are needed – just put all the ingredients in a bowl, mix (a fork will work for the mixing!), pour in a baking pan and bake.  In comes the mixture, out comes the cornbread – golden-yellow, light and fluffy!

  • Preheat the oven to 400F.
  • Spray a 9-inch round baking pan with a non-stick cooking spray.
  • In a large bowl, whisk the egg with a fork. Add milk and oil and mix until combined.
  • Add flour, cornmeal, sugar, baking powder and salt. Mix until combined.
  • Pour the batter in a baking pan.
  • Put in the oven and bake for 25 minutes.

      1. Melanie would it work to substitute one cup of creamed corn for the milk, or would I lose some magic baking secret by not having the milk protein?

        I am baking for a bake sale so I want to be careful.

        1. I’ve never tried substituting creamed corn for the milk, but I know it’s a common substitution for cornbread recipes, so I think it’s worth a try. If you try it, please post back and let us know how it turned out.

  1. I love cornbread so much! It’s not really a ‘thing’ here in Australlia like it seems to be in the US, which is a shame because it’s just so yum. I’ve tried making it a few times, though, as I was introduced to it via recipes from US food bloggers (definitely one of the perks of reading lots of food blogs – trying new foods!). To be honest, though, I think a lot of Australians wouldn’t know what it is – they’d probably think it was a cake or something, because it kind of looks likes one if you’ve never seen it before! There’s also one brand here (which is actually quite hard to find) that does a baking mix which you just add milk/water and oil to, and it was really yummy, too! I must try your golden, fluffy version next time, Melanie! :D
