  • 1 onion chopped
  • 2 celery stalks finely chopped
  • 1 carrot shredded
  • 8 oz mushrooms chopped
  • 1 cauliflower cut into florets
  • 1/2 cup chicken or vegetable stock
  • 4 tbsp butter
  • 1/2 tsp Italian herb seasoning
  • 1 tsp salt
  • 1/4 tsp pepper


  • Cut cauliflower florets into small pieces (about 1/4-inch).
  • Melt butter in a large non-stick frying pan over medium-high heat. Add onion, celery and carrot and cook, stirring occasionally, for 5 minutes.
  • Add mushrooms, cau,liflower, salt, pepper and Italian seasoning and cook, stirring occasionally, for 10 minutes.
  • Add the chicken or vegetable stock and cook, stirring occasionally, for 5 minutes, or until liquid evaporates and cauliflower is tender.
