Keto Cauliflower Stuffing

- 1 onion chopped
- 2 celery stalks finely chopped
- 1 carrot shredded
- 8 oz mushrooms chopped
- 1 cauliflower cut into florets
- 1/2 cup chicken or vegetable stock
- 4 tbsp butter
- 1/2 tsp Italian herb seasoning
- 1 tsp salt
- 1/4 tsp pepper
Cut cauliflower florets into small pieces (about 1/4-inch).
Melt butter in a large non-stick frying pan over medium-high heat. Add onion, celery and carrot and cook, stirring occasionally, for 5 minutes.
Add mushrooms, cau,liflower, salt, pepper and Italian seasoning and cook, stirring occasionally, for 10 minutes.
Add the chicken or vegetable stock and cook, stirring occasionally, for 5 minutes, or until liquid evaporates and cauliflower is tender.
