Lemon Bundt Cake Recipe

Are you craving something baked and lemony?  The best part about the lemon cake is putting your nose real close to the lemon cake and smelling it!  When you smell the lemon cake, you can already taste it in your mind.  This lemon cake is delicious for breakfast.  Citrus is awakening, and a lemon breakfast cake is a perfect way to start the day!

Ingredients For Lemon Bundt Cake Recipe:

2 eggs
1 cup sugar
1/2 cup vegetable oil
1 tbsp vanilla
1 lemon
1 cup lowfat plain yogurt
2 cups flour
2 tsp baking powder
1 tsp baking soda

Directions How To Make Lemon Bundt Cake:

Preheat oven to 375F.

Wash the lemon.  Zest the lemon: grate the thin top yellow layer of the lemon (without the white pith) using a grater with the smallest holes.

Whisk the eggs in a large bowl.  Add the sugar and stir until combined.  Add vanilla.  Add lemon zest.

Cut the lemon into quarters and squeeze out the lemon juice into the bowl with other ingredients.  Stir until combined.

Add flour to the bowl.  Sprinkle baking powder and baking soda evenly over the flour.  Add yogurt, then stir everything until combined.

Spray the inside of the non-stick bundt pan with non-stick cooking spray.  Pour the batter into the bundt pan.  Put in the oven and bake for 35 minutes.

Note: lemon zest is optional :)  If you don’t feel like zesting a lemon, don’t let it stop you from making this delicious lemon cake!  Just use lemon juice and omit the zest.  The lemon flavor will be less intense without the zest, but it will still be a terrific lemon cake.

Blueberry Pie Recipe

Ingredients for Blueberry Pie Recipe:

For Pie Crust:

2 1/2 cups of flour
2 tbsp sugar
1 tsp salt
2 sticks of butter, cut into pieces
1/2 cup of cold water

For Blueberry Filling:

6 cups of blueberries
1/2 cup of sugar
1/4 cup of cornstarch

Directions How To Make Blueberry Pie:

Make The Dough For The Crust:

Put flour, sugar, salt and butter in a food processor fitted with a steel blade.  Process in a food processor until everything is combined and looks like coarse crumbs.  Add water and process until combined.

Take the dough out of the food processor, divide into 2 equal parts and roll each part into a ball.  Wrap each dough ball with a plastic wrap and put in a refrigerator for 1 hour.

Assemble The Pie:

Preheat oven to 400F.

Spray the 9-inch non-stick pie pan with a non-stick cooking spray.

Roll one dough ball into a circle, large enough to cover the bottom and sides of the pie pan.

Put rolled dough in the pie pan so it covers the bottom and sides of the pan.

In a bowl, make the filling: mix blueberries, sugar and cornstarch.

Put the blueberry filling in the pie pan, on top of the bottom crust dough.

Roll the second dough ball into a circle, the diameter of the pie pan – this is the top crust.

Put the top crust on top of the filling.  Pinch together the edges of the top and bottom crusts, all the way around the pie pan, to seal the pie.  Cut several slits in the top crust (to let steam escape while the pie is baking).

Put the pie in the bottom portion of the oven.  After 20 minutes, lower oven temperature to 350F.  Bake for additional 45 minutes.

Spray the inside of the bundt pan with non-stick cooking spray.

In a large bowl, whisk the eggs.  Whisk in the sugar.  Add the oil, vanilla and yogurt and mix until combined.

Add the flour, then sprinkle with baking powder and baking soda.  Mix until combined.  Add the blueberries and stir.

Pour the batter into the bundt pan.  Put in the oven and bake for 40 minutes.

Chocolate Bundt Cake Recipe

A slice of this rich chocolate bundt cake goes so well with the morning cup of coffee!

Ingredients for the chocolate bundt cake:

3/4 cup cocoa powder
1 cup chocolate chips
3/4 cup hot water
1 1/2 sticks butter, melted
1 cup yogurt
1 tbsp vanilla
5 eggs
2 cups packed brown sugar
1 3/4 cup flour
1 tsp salt
1 tsp baking soda

Directions on how to make chocolate bundt cake:

Preheat oven to 350F.

Pour hot water over cocoa and chocolate chips and stir.  Add melted butter and stir until combined.  Add yogurt and vanilla and stir until combined.

In a separate bowl, whisk eggs with sugar.  Add to the cocoa, chocolate chips, butter,  yogurt and vanilla mixture, and stir until combined.

Mix flour with salt and baking soda.  Add the flour mixture to the liquid ingredients and stir until combined and smooth.

Spray the non-stick bundt pan with non-stick cooking spray – make sure that you have coated the inside completely.  Pour the batter into the bundt pan.  Bake for 50 minutes.

Upside-Down Peach Cake Recipe

Ingredients:

6 peaches
3 eggs
1/2 stick butter, melted
1 cup sugar
1 cup flour
1 tsp baking powder

Directions:

Preheat oven to 375 F.

Slice the peaches and discard the pits.  Put the peach slices on the bottom of non-stick 9-inch baking pan in a single layer.

In a large bowl, whisk the eggs.  Add sugar and butter and stir until combined.  Add flour and baking powder and stir until combined.

Pour the batter over the peach slices, so it covers the peach slices.  Bake for 35-40 minutes.

Invert the cake before serving so the peaches are on top - either invert the whole cake onto a plate, or slice it first, and invert the individual slices.

Chocolate Chip Cookies Recipe

Ingredients for chocolate chip cookies recipe:

2 1/4 cups flour
1 tsp baking powder
2 sticks (1/2 lb) butter, softened
1 1/2 cup sugar
2 eggs
1 tsp vanilla
2 cups chocolate chips

Directions on how to make chocolate chip cookies:

Preheat oven to 375 F.

Combine butter and sugar.  Add eggs and vanilla, and mix until combined and smooth.

Add flour, baking powder and chocolate chips and stir until combined.

Line the baking sheet with parchment paper.  Drop the cookie batter by tablespoons on the baking sheet, leaving at least 1-inch space between the cookies.

Bake for 10 minutes.  Do not overbake!  Remove the cookies for the oven even if they look undercooked.

Enjoy these classic chocolate chip cookies loaded with chocolate chips!

Upside-Down Plum Cake Recipe

Ingredients:

8 plums
3 eggs
1 cup sugar
1/2 stick (4 tbsp) of butter, melted
1 cup flour
1 tsp baking powder

Directions:

Preheat oven to 375 F.

Slice the plums and discard the pits.  Put the plums on the bottom of the non-stick 9-inch baking dish.

 In a large bowl, whisk the eggs.  Add sugar and mix.  Add butter and mix.   Add the flour and baking powder and stir until combined.

Pour the batter on top of the plums.

 

Put the baking dish in the oven.  Bake for 35 minutes.

 When slicing the cake, invert the slices upside down, so the plums are on top.  Alternatively, you can invert the whole cake first on the plate and then slice it.  I prefer inverting individual slices with a spatula as opposed to maneuvering the whole cake.

Note: the plums have sour notes, and I like it this way :)  If you’d rather have it sweet, you can sprinkle the layer of plums with an extra 1/4 cup of sugar before pouring the batter on top.

Italian Lemon Ice Recipe

Perfect refreshing treat on a hot summer day!

Ingredients For Homemade Italian Lemon Ice Recipe:

3 lemons
1 1/2 cup water
1 1/4 cup sugar

Directions On How To Make Italian Lemon Ice At Home:

Squeeze all the juice out of the lemons.  I cut each lemon into 8 parts, then squeeze each piece – this way it yields the most juice :)

Combine water with sugar in a microwave-safe bowl and microwave for several minutes, until the water is hot.  Stir to dissolve the sugar.

Pour the sugar water and lemon juice into a 9-inch baking dish, and stir to combine.  Put it in the freezer.

After 1 hour, rake it with fork to break up the ice crystals.  Repeat raking with fork every hour until the desired consistency is reached (usually around 3-4 hours from the time you first put it in the freezer).

Lemon Bars Recipe

These lemon bars have intense lemon flavor and are perfect for lemon dessert lovers!

Ingredients:

For The Crust

1 cup flour
1 stick butter, softened
1/4 cup powdered sugar

For The Filling

5 eggs
1 1/2 cup sugar
3/4 cup lemon juice
1/2 cup flour
3/4 tsp baking powder

Directions on how to make lemon bars:

Make The Crust

Preheat oven to 350 F.

Line the 8″ square baking dish with th parchment paper. 

In the food processor, combine flour, butter and powdered sugar.   Put all the mixture in the baking dish, and spread evenly and press into the bottom of the dish to form a crust. 

Bake for 15 minutes, then remove from the oven.

Make The Filling

Combine eggs and sugar, then mix in the lemon juice.  Add flour and baking powder and stir until combined. 

Pour the filling on top of the crust.  Bake for 25 minutes.

Let it cool down, then refrigerate until cold.  Remove from the refrigerator, cut into bars and sprinkle with powdered sugar.

Double Chocolate Cookies With White Chocolate Chips

Ingredients:

2 cups flour
1 tsp baking powder
2 sticks butter, softened
1 1/2 cup sugar
1/3 cup cocoa powder
2 eggs
1 tbsp vanilla
2 cups white chocolate chips
1 cup chopped walnuts

Directions:

Preheat oven to 375 F.

Cream together butter and sugar.  Add eggs and vanilla and mix until combined.

Add flour, baking powder and cocoa powder and stir until combined.

Add chocolate chips and nuts and stir until combined.

Line the baking sheet with parchment paper.  Drop the cookie batter by a tablespoon on a baking sheet, spacing the cookies at least 1 inch apart.

Bake for 10 minutes.  The cookies will look undercooked, but take them out.  After they cool down, they’ll be just right :)
