This upside-down plum cake is incredibly simple to make and bursting with flavor! Fresh plums are layered in the baking dish, topped with a light batter, and baked to perfection. It’s the ideal dessert when plums are in season, balancing sweetness with a slight tartness from the juicy plums.
Slice the plums and remove the pits. Arrange the sliced plums in a single layer on the bottom of a 9-inch non-stick baking dish.
In a large bowl, whisk the eggs until smooth. Add sugar and mix well.
Stir in the melted butter until combined, then add the flour and baking powder, mixing until the batter is smooth.
Pour the batter evenly over the plums in the baking dish.
Place the baking dish in the preheated oven and bake for 35 minutes or until the top is golden and a toothpick inserted into the center comes out clean.
Once baked, slice and invert each piece to place the plum side up, or invert the entire cake onto a serving plate before slicing.
Optional
For added sweetness, sprinkle ¼ cup of sugar over the plums before pouring the batter.
