Ingredients

1 package instant ramen noodles 3.5 oz, discard the seasoning packet
1 tbsp butter unsalted
1 garlic clove minced
¼ tsp red pepper flakes
1 tsp brown sugar
1 tbsp soy sauce
¼ cup reserved ramen cooking water
1 egg large, lightly beaten
2 tsp everything bagel seasoning
1 green onions thinly sliced, optional for garnish

Instructions

Cook ramen noodles in boiling water according to package directions (without the seasoning). Drain, but save ¼ cup of the cooking water.
In a skillet over medium heat, melt the butter.
Add the minced garlic and sauté for about 1 minute until fragrant.
Stir in red pepper flakes, brown sugar, and soy sauce. Let simmer for another minute.
Add cooked noodles and a splash of the reserved water. Toss to coat the noodles evenly.
Push the noodles to one side of the skillet and pour in the beaten egg. Scramble gently until the egg is just set.
Mix the egg into the noodles, adding more water as needed to loosen the sauce.
Transfer the ramen to a bowl and sprinkle with everything bagel seasoning. Top with green onions if desired.

Notes

Don’t skip saving the pasta water, it helps make the sauce silky and coats the noodles perfectly.
You can replace everything bagel seasoning with sesame seeds or crushed seaweed for a different twist.
