Slow Cooker Beef Stroganoff

Ingredients
- 1 ½ pounds cubed beef stew meat
- 1/4 salt and ground black pepper to taste
- 1 onion chopped
- 1 can condensed cream of mushroom soup 10.75 ounce
- ¼ cup water
- 1 tbsp dried chives
- 2 cloves garlic minced
- 1 tbsp Worcestershire sauce
- 1 cube beef bouillon
- ½ cup red wine
- 1 tbsp cornstarch
- 1 tbsp all-purpose flour
- 1 container sour cream 8 ounce
- 1 package fresh mushrooms 8 ounce, sliced
- 4 ounces cream cheese
- ½ cup fresh parsley chopped
Instructions
- Season the beef stew meat with salt and pepper, then spread it evenly in the bottom of the slow cooker. Top with chopped onion.
- Pour the cream of mushroom soup and water over the beef and onions. Add dried chives, garlic, Worcestershire sauce, and the beef bouillon cube.
- In a small bowl, whisk together the red wine, cornstarch, and flour until smooth. Pour this mixture into the slow cooker.
- Cover and cook on Low for 6 to 7 hours.
- Stir in the sour cream, sliced mushrooms, cream cheese, and chopped parsley.
- Continue cooking on Low for 1 more hour, until creamy and heated through.
Notes
- Leftovers can be stored in an airtight container in the refrigerator for up to four days.
For longer storage, freeze for up to three months.
