Ingredients

½ cup butter
1 onion chopped
1 package broccoli frozen, chopped
4 cans chicken broth 14.5 ounce
1 loaf cheese food processed, cubed
2 cups milk
1 tbsp garlic powder
⅔ cup cornstarch
1 cup water

Instructions

Melt butter in a large pot over medium heat. Add the chopped onion and cook, stirring occasionally, until soft. Stir in the frozen chopped broccoli.
Pour in the chicken broth and bring to a simmer. Cook for 10 to 15 minutes, until the broccoli is tender.
Reduce the heat to low and add the cubed processed cheese. Stir until completely melted.
Stir in the milk and garlic powder until well combined.
In a small bowl, mix the cornstarch and water until smooth.
Stir the cornstarch mixture into the soup and cook, stirring frequently, until the soup thickens.

Notes

For a fancier version, add 1 cup sliced mushrooms and 1 cup white wine with the onions.
Can be made with fresh or frozen broccoli.
