Ingredients

3 cups blueberries fresh
1/3 cup orange juice
3 tbsp white sugar for filling
2/3 cup all-purpose flour
1/4 tsp baking powder
1/16 tsp salt or a pinch
1/2 cup butter softened
1/2 cup white sugar for topping
1 egg
1/2 tsp vanilla extract

Instructions

Preheat your oven to 375°F.
Add the blueberries, orange juice, and 3 tablespoons of sugar directly into an 8x8-inch baking dish. Stir to combine evenly.
In a small bowl, mix together the flour, baking powder, and salt.
In a separate large bowl, beat the softened butter with 1/2 cup sugar until light and fluffy.
Mix in the egg and vanilla extract until smooth.
Gradually add the flour mixture into the butter mixture and stir just until combined. Do not overmix.
Drop spoonfuls of the batter over the blueberry mixture, covering most of the surface.
Bake for 35–40 minutes, or until the topping is golden brown and the blueberry filling is bubbling.
Let cool slightly before serving.

Notes

This cobbler tastes best served warm with vanilla ice cream or whipped cream.
You can use other fresh fruits in place of blueberries using the same method.
