Chunky Chicken Salad Recipe

I always make this chunky chicken salad recipe from leftover roast chicken.  Since this chicken salad is chunky (as opposed to creamy), it doesn’t have to be spread on the sandwich – chunky chicken salad can be a stand-alone dish.

There are three options on how to eat this chunky chicken salad: (1) by itself (2) on a sandwich (3) wrapped in a tortilla

Chunky chicken salad recipe has only 4 ingredients, so it’s really easy to make.  If you don’t have a pickle, just omit it – this way the chunky chicken salad will have just 3 ingredients, and will still taste great!

Ingredients for Chunky Chicken Salad Recipe:

1 cup leftover chicken meat
2 eggs, hard-boiled
1 pickle
2 tbsp mayo

Directions How To Make Chunky Chicken Salad:

Chop the chicken meat.  Peel and chop the hard-boiled eggs.  Mince the pickle.

Put chicken, eggs and pickle in a bowl and add the mayo.  Mix everything until combined.  If necessary, add salt and pepper to taste.

Tomatoes, Avocado and Cilantro Salad Recipe

I created this salad when I had avocado in my fridge, but was tired of guacamole :)

Salad Ingredients:

Tomatoes
Avocado
Cilantro
Olive Oil
Lime Juice

Directions For Making The Salad:

Chop the tomatoes.  Peel and chop the avocado.  Chop the cilantro.

Whisk together olive oil and lime juice (3 parts oil to 1 part juice) to make a salad dressing.

Mix tomatoes, avocado, cilantro and dressing.

Salad With Mache Lettuce (Lamb’s Lettuce) And Avocado

I went to Trader Joe’s and saw that unusual lettuce sold in packages.  It had tiny cute crisp green leaves.  The name of the lettuce on the package was Mache Lettuce, and the package also noted the lettuce’s alternate name – Lamb’s Lettuce.  The package with lamb’s lettuce also had an orange sticker that said “Great With Avocadoes”.  So I came back from Trader Joe’s with the mache lamb’s lettuce and a couple of avocadoes, ready to make a yummy new salad!

Ingredients For The Salad:

Mache (Lamb’s) Lettuce
Avocado
Balsamic Vinegar
Olive Oil

How To Make A Salad

Whisk together balsamic vinegar and olive oil to make a dressing (3 parts oil to 1 part vinegar).  In a bowl, toss the mache lettuce with the dressing.  Put the lettuce on a plate.

Peel and pit the avocado.  Thinly slice the avocado.  Put the avocado slices on top of the lettuce.

Salad With Tomatoes, Cucumbers And Cilantro

This is a very refreshing and healthy salad!

Ingredients For The Salad:

Tomatoes
Cucumbers
Cilantro
Oil
Vinegar

Directions How To Make The Salad:

Cut tomatoes and cucumbers into cubes.  Chop cilantro.

Make a salad dressing with a ratio of 3 parts of oil to 1 part of vinegar.

Mix all ingredients.

Turkey, Avocado And Corn Salad Recipe

This salad is filling enough to be a main dish!

Ingredients:

Cubed cooked turkey breast
Canned corn, drained
Avocado, cubed
Lettuce leaves
Oil
Vinegar

Directions:

Whisk oil and vinegar (3 parts oil, 2 parts vinegar) to make a dressing.

In a large bowl, combine all ingredients.  Toss with dressing to coat.

Note: you can also use cubed ham instead of turkey

Spinach Salad With Orange And Avocado

Ingredients:

Baby Spinach Leaves
Orange Segments (from a can)
Avocado, sliced
Olive Oil
Lemon Juice or Vinegar

Directions:

Make the dressing by mixing oil and lemon juice (2:1 ratio).

Put the orange segments and avocado pieces on a bed of spinach.  Pour the dressing over it and toss to combine.
