Cook the sushi rice according to the package instructions.
In a microwave-safe bowl, combine rice vinegar, sugar, and salt. Microwave for 30 seconds or until dissolved, then mix into the cooked rice and set aside.
Season salmon with salt and pepper, then air fry at 400°F for 10–12 minutes or bake at 375°F for 15–17 minutes.
In a large bowl, shred the cooked salmon and imitation crab with a fork.
Add cream cheese and Sriracha mayo to the seafood mixture and stir until smooth and creamy.
Preheat oven to 400°F. Spread the seasoned rice into a greased 9x9 or 9x13 baking dish and press down evenly.
Sprinkle furikake over the rice, then layer the creamy salmon mixture on top and smooth it out.
Bake for 10–15 minutes, then top with more Sriracha mayo, furikake, sesame seeds, and green onions. Serve warm with seaweed snacks.
Notes
No Sriracha mayo? Just mix ⅓ cup Kewpie mayo with 2 tablespoons Sriracha sauce for a perfect substitute.
